Shortcross Irish Whiskey is carefully crafted at Rademon Estate Distillery.

In a time honoured tradition the Shortcross Irish Whiskey journey began in 2015 when we distilled our first Shortcross whiskey on Ireland’s smallest copper pot still and we’ve been distilling our very own Irish Whiskey ever since.

We’re obsessive about the Irish Whiskey we craft! We carefully consider every detail from mash bills, fermentation, distillation and maturation. We strive to create as much flavour as possible in each step of our whiskey making process.

Shortcross Single Malt Irish Whiskey Has Three Main Ingredients

Our inaugural Shortcross Single Malt Irish Whiskey was double distilled in our iconic 450L Copper Pot Still, at the time the smallest whiskey still in use on the island of Ireland.

Crafted from 100% Irish distilling malt and aged in select casks, this provides the blueprint for our Shortcross Whiskey, creating rich full bodied whiskies that are big on flavour yet refined in their taste.

Future releases will follow as the distillery continues to explore the influences of mash bills, fermentation, cask selection and time.

Shortcross Rye & Malt Irish Whiskey

Our carefully crafted Rye & Malt edition of Shortcross Irish Whiskey has been proudly distilled, matured and bottled at Rademon Estate Distillery.

Created with a unique mashbill of 100% Irish malted rye and malted barley. This Whiskey has been double distilled on our copper pot stills, including one of the smallest whiskey stills on the Island of Ireland. Aged for at least five years in a combination of virgin chinquapin oak and ex-bourbon barrels. Non-chill filtered. All natural colour.

Bottled at 46% abv and with a cask strength version at 66% abv.

Shortcross Peated Single Malt Irish Whiskey

Often described as the most beguiling of flavours and aromas in whiskey, peat had been lost from Irish Whiskey until the late 1980’s when a new iconic brand of Peated Single Malt Irish Whiskey was created.

Our Founder and Head Distiller, David, was inspired and intrigued by Peated Whiskey, so much so, he began carefully crafting his own Peated Single Malt Irish whiskey in 2016.

With water from our historic estate well, we mash in heavily peated distilling malt, this produces a sweet and intensely smokey malt whiskey.

The first release of our Shortcross Peated Single Malt Irish Whiskey is planned in the near future and it is currently sleeping in a unique combination of cognac liqueur casks.

Shortcross Single Pot Still Irish Whiskey

The history of Irish Whiskey is one that has seen many contrasts in how Irish whiskey is produced from pot stills to column still’s, from big to small but perhaps most telling is mash bill to mash bill.   Irish Single Pot Still Whiskey has its origins in  the Malt Tax of 1785 that sought to tax distilleries on how much malt they used.  Not to be outdone by the tax authorities Irish distillery’s of the time sought to supplement the malt used in their whiskies with raw, unmalted barley, and the effect on Irish Whiskey was so profound that it lives on today.

Single Pot Still Irish Whiskey is unique in that it is produced from a blend of malted barley, raw barley, and in many cases other cereals too, but it is the use of raw barley that gives Pot Still Irish Whiskey its signature mouthfeel, flavours and aromas.

As a modern Irish distillery we are part of the renaissance of Irish Whiskey,  our founder’s Fiona and David wanted to create their own legacy with this signature style of Irish Whiskey.

Double distilled and resting in casks since 2018, our Shortcross Single Pot Still  Irish Whiskey is one that we are very excited about.

Irish Whiskey Innovation

Irish Whiskey has it's own rules and guidelines on production and whilst many claim constraints, we claim freedom to create Irish Whiskey on our own terms.

Looking beyond the traditions and methods used by others, our distillery continually seeks to lay down whiskey from a range of grains, mash bills and methods that inspire Fiona and David. In time they will be brought to life as part of our portfolio of Shortcross Irish Whiskey.
